Summary

The purpose of this project is the elaboration of new technologies of grape seeds processing on the basis of scientifically argumentation of different technological regimes.

The scientific survey of this project is dedicated to the researches of the efficient use of the secondary wine products in generally, and the grape seeds in particular.

The researches were effectuated on the basis of the study of technical European breeds of grapes, like also kinds of grapes of new selection, created in cadre of I.N.V.V.

The quantitative determination of content of oil in grape seeds from basic technical kinds and in different zones of Republic of Moldova, the improvement of technological regimes of separation of grape seeds from the fresh husk of grapes, study of technological regimes of keeping the seeds and elaboration of optimal parameters of keeping till the treatment, have permitted the application of new methods of extraction of oil from the grape seeds, of methods of physical-chemical analysis of different components elaborated and modified at INVV, like also methods recommended by OIVV. According the technological regimes that were created and optimized during the work on the utilization of the technological equipment perfection for the separation of grape seeds, condition, the drying and pressure of the seeds, were treated more then 100 tones of seeds, for obtaining the grape oil.

The elaboration and argumentation of new technologies of complex treatment of the grape seeds have permitted the production of new products: oil of seeds and sorbents for elimination of unpleasant kinds of wines and strong drinks.

We studied the new technology of clarifying the oil from grape seeds. On base of effectuated studies, were technologically appreciated different kinds of seeds separators. The study of the technological process of keeping the seeds before treatment, proved the possibility of utilization as equipment of storing technological wares. Was elaborated a new construction of thermal pressure for fabrication of oil from grape seeds, at factories of prime wine – making, without seeds transportation at specialized enterprises.

The supplemental profit obtained at producing of one litre of grape seeds oil, according to the elaborated technology constitutes 17, 79 lei, fact which confirms the high efficiency of the new technology. The total economic effect obtained at fabrication of 1000 litres of grape seeds oil constitutes 17. 79 thousand lei.

Concomitantly with economic advantage, the new technology of obtaining the oil through the pressure method is of perspective thanks to higher quality of the obtained oil. The effectuated scientific researches, and the obtained results, confirmed the applicative aspect of elaborated technologies that were checked in conditions of producing at complex treatment of grape seeds
