The thesis consists of introduction, 4 chapters, conclusions and recommendations, bibliography that includes 253 titles, 4 annexes, 115 pages of basic content, 48 tables, 28 figures. The results were presented in 14 publications.
Research area: Engineering sciences and technologies.
Purpose: Identification of the microelemental profile of quality sparkling wines with Designation of Origin "CRICOVA"; elucidation of the influence of agro-pedo-climatic conditions and of the manufacturing technology in order to elaborate the specifications for the production of quality sparkling wines DO “CRICOVA”.
Objectives: Study of the level of influence of climatic factors, the production capacity of the plantation in the area of Cricova vineyard. Assessment of the impact of climate change on the production of the Pinot Noir variety cultivated in the area of the Cricova vineyard; appreciation and argumentation of the use of the Pinot Noir variety cultivated in the area of the Cricova vineyard for the production of quality sparkling wines PDO "CRICOVA".
Scientific novelty and originality. For the first time, the analysis of microelements was made from the raw material wines for sparkling wines, coming from the vineyards in the “Codru” region and the content of these elements in the soils of the plantations. The correlation and the transfer coefficient of microelements from soils to wine were investigated. The influence of the technological treatments of the raw material wines on the physico-chemical composition of the assemblies for quality sparkling wines “CRICOVA PINOT NOIR” was analyzed.
The results that contributed to solving the scientific problem: The influence of agro-climatic conditions and technological regimes for the production of quality sparkling wines “CRICOVA PINOT NOIR” with designation of origin and pre-established authentic properties was argued. The authenticity criteria have been established - the microelemental profile of DO “CRICOVA” wines, which will allow the protection of sparkling wines against counterfeits.
Theoretical significance and applied value: Based on investigations conducted over 7 years (a.2012-2019) new scientific results were obtained regarding the microelemental composition of raw material wines for sparkling wines and the transfer coefficient of microelements from soils to wine, which allowed the discrimination of wines both by variety and by origin (vineyard). As a result of the research, the impact of pedoclimatical and technological factors on the quality of "CRICOVA" quality sparkling wines was determined and the possibility of producing "CRICOVA PINOT NOIR" PDO sparkling wines was argued.
Implementation of scientific results: Under conditions of production at CV "CRICOVA" SA were obtained batches of raw material wines for quality sparkling wines of the Pinot Noir variety, produced exclusively in the town. Cricova, starting with the grapes growing and ending with obtaining quality sparkling wines. The results of the investigations were used in the elaboration of the Specifications regarding the production of quality sparkling wines with Designation of Origin “CRICOVA PINOT NOIR”. As a result of the research, the technological instruction and the specifications for the production of quality sparkling wines DO “CRICOVA PINOT NOIR” were elaborated, which are implemented in production at CV “CRICOVA” S.A.
